Here's the tea: microwaves are made for SO much more than just reheating day old lasagna. If you haven't been making omelettes and skillet cookies in your microwave, you are missing! out! Let's get you caught up with some recipes for microwave meals.
Breakfast:
• Mug muffins
◦ 1/4 c oat flour (or flour of your choice)
◦ 1/2 tsp baking powder
◦ 2 tbsp honey, maple syrup, or sugar
◦ 1 egg white (or 1/4 c aquafaba* for egg free version)
◦ 1/2 tsp vanilla extract
◦ Any toppings you want - think chocolate chips, berries, bananas, cinnamon, cocoa powder, you name it!
◦ Mix all ingredients in a large, microwave-safe mug. Once combined, microwave for 60 seconds. Let cool for about 30 seconds before removing from microwave and enjoy!

• Mug omelette
◦ 1 egg
◦ Splash of milk
◦ Salt and pepper
◦ Any mix ins you want - red pepper, onion, tomato, spinach, ham, bacon, cheese
◦ Spray your large, microwave-safe mug with cooking spray. Mix all ingredients in mug. Microwave for 1 minute, stir, and microwave for one more minute. Let cool and enjoy!

• Baked blueberry oatmeal
◦ 1/2 c rolled oats
◦ 1 tbsp ground flax seed
◦ 1 egg
◦ 1/2 c milk of choice
◦ 1/3 banana, mashed
◦ 1/4 tsp cinnamon
◦ 2 tsp maple syrup
◦ 1/3 c blueberries
◦ Spray your large, microwave-safe mug with cooking spray. Combine all ingredients except all blueberries, and once combined, gently fold in blueberries. Microwave for 2-3 minutes (check at 2), and let cool in microwave. Enjoy!

• Mac 'n cheese
◦ 1/2 c elbow pasta
◦ 1/2 c water ◦ pinch of salt
◦ 2 tbsp milk of choice ◦ 2 tsp butter
◦ Shredded cheese, amount to your liking
◦ Paprika to season
◦ Add pasta, water, and salt to large, microwave-safe mug. Microwave for 4-5 minutes. Add milk, butter, cheese, and salt. Microwave for 30 seconds, sprinkle with paprika, and enjoy!

• Chicken pot pie
◦ 1 tbsp butter
◦ 1 tbsp flour
◦ 1 mushroom, chopped
◦ 1/4 c half-and-half
◦ 1/4 c chicken broth
◦ 2-3 tbsp frozen peas and carrots
◦ Pinches of salt, pepper, and thyme
◦ 1/3 c cooked diced or shredded chicken
◦ 1 biscuit (from tube of dough)
◦ Add butter to mug and microwave until melted. Stir in flour. Stir in mushroom, and microwave ~1 minute. Stir in the chicken broth and half-and-half well. Add peas, carrots, thyme, salt, and pepper. Microwave for 1.5 minutes, stirring every 30 seconds. Stir in chicken. Cover top of mug with flattened biscuit dough and press to seal rim. Cut a small slit in the top, and brush with half-and-half. Microwave for 1.5 minutes in 30 second intervals

• Fried rice
◦ 1/2 c rice
◦ 1 c water
◦ 1 tbsp soy sauce
◦ 1 tbsp sesame oil
◦ 1/2 c frozen peas and carrots
◦ 2 eggs ◦ Salt and pepper
◦ Sesame seeds and fresh scallions, for garnish ◦ In a large, microwave-safe mug, combine rice, water, soy sauce, and sesame oil. Stir, and then microwave, covered for 6-8 minutes until rice is cooked. Add in frozen peas and carrots. In a separate mug, beat the eggs and add salt and pepper. Microwave both mugs for 1-2 minutes until eggs are cooked. Mix eggs into rice, garnish, and enjoy!

The part you've all been waiting for ... MUG CAKES:
• Molten chocolate mug cake (for 2!)
◦ 1/4 c flour
◦ 1/4 sugar
◦ 2 tbsp unsweetened cocoa powder
◦ 1/2 tsp baking powder
◦ pinch of salt
◦ 3 tbsp melted butter
◦ 3 tbsp milk
◦ 1 egg
◦ 1/4 tsp vanilla
◦ 1 oz chopped chocolate, or a spoonful of Nutella
◦ 1 tbsp water
◦ In a 2-cup microwave-safe mug, whisk together flour, sugar, cocoa powder, baking powder, and salt. Add melted butter, milk, egg, and vanilla, and whisk well. Place chocolate or Nutella in center (don't push down - it'll sink). Right before placing in microwave, drizzle water on top of batter. Cook for 1 minute and 15 seconds, and let col for 2 minutes. Enjoy!!

• Chocolate chip cookie
◦ 1 tbsp butter
◦ 1 tbsp sugar
◦ 1 tbsp brown sugar
◦ 1/2 tsp vanilla
◦ Pinch of salt
◦ 1 egg yolk
◦ 3 tbsp flour
◦ 1.5 tbsp chocolate chips
◦ Microwave butter in a microwave-safe mug until melted. Mix in both sugars, vanilla, and salt until combined. Mix in egg yolk fully, and mix in flour. Fold in chocolate chips. Microwave for 40-50 seconds, and enjoy!

• Cinnamon roll
◦ 9 tbsp flour
◦ 3/4 tsp baking powder
◦ pinch of salt
◦ 3-4.5 tbsp water
◦ 3/4 tsp cinnamon
◦ 1.5 tbsp sugar
◦ 1/2 tsp water
◦ Frosting:
‣ 3 tbsp powdered sugar
‣ Drop of milk
◦ Spray a large, microwave-safe mug with cooking spray. Make the frosting first by combining the powdered sugar with the milk. Stir until smooth and set aside. Add flour, baking powder and salt to a small bowl and stir to combine. Add water gradually and stir to form a dough. Knead dough until it's smooth and not too sticky. Roll dough in a long strip ~4 inches wide. Sprinkle sugar and cinnamon over dough and roll inward. Place the roll in the greased mug. Pour 1/2 tsp water over the roll, and microwave for 50 seconds. Let cool, take out of mug, and top with frosting. Enjoy!
